Step-by-Step Instructions for Christmas Pecan Turtles
  1. Preheat your oven to 350°F (175°C), spread pecans on a baking pan and toast for 8-10 minutes.
  2. Melt 6 tablespoons of unsalted butter in a microwave-safe bowl.
  3. Combine melted butter with light brown sugar, regular sugar, light corn syrup, and condensed milk.
  4. Heat the caramel mixture in the microwave for about 6 minutes, stirring halfway through.
  5. Add vanilla extract and chopped pecans to the caramel mixture.
  6. Cool the pecan-caramel mixture at room temperature and then refrigerate for at least 30 minutes.
  7. Melt 2 cups of chopped chocolate in a microwave-safe bowl until smooth.
  8. Scoop portions of the cooled mixture, dip in chocolate and place on wax paper.
  9. Refrigerate again for 30 minutes to allow chocolate to set.
