  • 1 lb Jumbo Shrimp peeled, deveined, and tail-on
  • 1 tsp Salt to taste
  • 1 tsp Pepper freshly cracked, to taste
  • 1 cup All-Purpose Flour for coating
  • 1 tbsp Curry Powder adjust based on spice preference
  • 2 large Egg Whites acts as a binding agent
  • 1 cup Sweetened Flaked Coconut or unsweetened
  • 1 cup Breadcrumbs or Panko for lighter texture
  • 2 cups Vegetable Oil for frying

Method
 

Step-by-Step Instructions
  1. Place the peeled and deveined jumbo shrimp in a resealable bag. Add all-purpose flour, curry powder, salt, and pepper, then seal and shake until coated.
  2. Set up your breading stations with one bowl for whisked egg whites and another for the coconut-breadcrumb mixture.
  3. Coat each floured shrimp in the egg whites, allowing excess to drip off, then roll in the coconut-breadcrumb mixture.
  4. Freeze the coated shrimp on a lined baking sheet for about 20 minutes to set the breading.
  5. Heat the vegetable oil in a large pot to 350°F (180°C).
  6. Fry the shrimp in batches for about 2 minutes per side until golden brown.
  7. Drain the fried shrimp on paper towels and serve warm.
