Method
 

Cake Preparation
  1. Preheat your oven to 350°F (175°C) and grease three 6-inch round cake pans.
  2. Dust pans lightly with cocoa powder to prevent sticking.
  3. In a stand mixer, mix dry ingredients for about 1 minute.
  4. In a separate bowl, whisk together wet ingredients for 1-2 minutes.
  5. Combine the wet and dry mixtures, mixing for 2-3 minutes until smooth.
  6. Divide batter into pans and bake for 30-35 minutes.
  7. Check with a toothpick for doneness.
  8. Let the cakes cool.
Frosting and Assembly
  1. Beat softened butter in a large bowl until creamy.
  2. Gradually add sugars and vanilla, mixing well.
  3. Incorporate the heat-treated flour and milk to reach a fluffy consistency.
  4. Fold in chocolate chips.
  5. Prepare ganache by heating chocolate and cream until smooth.
  6. Chill the cake layers after frosting.
  7. Assemble the cake with frosting between layers and on top.
  8. Pour cooled ganache over center, letting it drip down.
  9. Top with crumbled cookies.
