Method
 

Directions
  1. Bring a large pot of salted water to a boil and cook the fresh noodles according to package instructions, usually around 3–5 minutes. Drain and rinse briefly under cold water.
  2. In a large skillet, heat vegetable oil over medium heat. Add ground pork and cook for 5–7 minutes until browned, breaking it into small pieces.
  3. Stir in minced garlic and ginger, cooking for an additional 1–2 minutes until fragrant.
  4. Lower the heat and pour in soy sauce, sesame paste, chili oil, and rice vinegar. Stir well and simmer for 2–3 minutes.
  5. Carefully add the cooked noodles to the skillet, tossing gently to coat them in the sauce.
  6. Add Sichuan peppercorns to taste and remove from heat. Serve the noodles in bowls.
  7. Top with green onions, fresh vegetables, and crushed peanuts for garnish.
