- Bring a large pot of salted water to a boil and cook the fresh noodles according to package instructions, usually around 3–5 minutes. Drain and rinse briefly under cold water.
- In a large skillet, heat vegetable oil over medium heat. Add ground pork and cook for 5–7 minutes until browned, breaking it into small pieces.
- Stir in minced garlic and ginger, cooking for an additional 1–2 minutes until fragrant.
- Lower the heat and pour in soy sauce, sesame paste, chili oil, and rice vinegar. Stir well and simmer for 2–3 minutes.
- Carefully add the cooked noodles to the skillet, tossing gently to coat them in the sauce.
- Add Sichuan peppercorns to taste and remove from heat. Serve the noodles in bowls.
- Top with green onions, fresh vegetables, and crushed peanuts for garnish.
