Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a mixing bowl, combine the mashed bananas and melted coconut oil. Stir until well combined.
Add the honey, beaten egg, and vanilla extract to the banana mixture. Mix until smooth.
Sprinkle the baking soda, salt, and cinnamon over the mixture and stir to combine.
Gradually add the flour, mixing until just incorporated. Be careful not to overmix. If desired, fold in the chopped nuts.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with aluminum foil.
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
