- Begin by creaming together butter and caster sugar in a mixing bowl until light and fluffy, about 3-4 minutes. Add one egg, mixing well, followed by combining rye flour, all-purpose flour, baking powder, and cardamom until the dough appears crumbly yet moist.
- Preheat your oven to 350°F (175°C). Grease a pie dish and press the dough into the bottom and sides evenly. Bake the crust for about 10 minutes or until lightly golden and set.
- While the crust bakes, whisk together sour cream, caster sugar, and another large egg until smooth. Incorporate vanilla extract and cardamom for added flavor. Gently fold in fresh blueberries coated in a little flour.
- Spread the blueberry mixture evenly over the baked crust. Pour the sour cream mixture carefully over the blueberries, filling to the edge of the crust.
- Return the assembled Mustikkapiirakka to the oven. Bake for an additional 25-30 minutes, or until the filling is set and the top is golden.
