- Begin by heating a heavy skillet over medium-high heat. Add 2 tablespoons of butter, letting it melt completely until it starts to bubble and foam.
- Once the butter is bubbling, add 2 cups of fresh corn kernels, 1 diced onion, 1 chopped jalapeño, and 1 diced red pepper to the skillet. Cook for about 6–10 minutes until the edges are slightly charred.
- Reduce the heat to medium-low and add 2 cups of shredded Monterey Jack cheese. Mix in 1/4 cup of mayonnaise, the juice of 1 lime, and a pinch of salt and pepper. Stir until the cheese melts into a creamy mixture, about 2–3 minutes.
