Method
 

Instructions
  1. Preheat your oven to 375°F (190°C) to ensure even cooking of the Spicy Maple Chicken.
  2. In a medium bowl, whisk together pure maple syrup, soy sauce, sriracha, minced garlic, and chili flakes.
  3. Season both sides of the chicken breasts generously with salt and pepper. Heat a skillet and add olive oil, sear the chicken for 2-3 minutes on each side.
  4. Transfer the chicken to a baking dish and pour the marinade over it.
  5. Place the baking dish in the oven and bake the chicken for 20-25 minutes until done.
  6. In a medium saucepan, combine jasmine rice, coconut milk, chicken broth, and salt. Bring to a boil, reduce heat, and simmer covered for 18-20 minutes.
  7. Let the chicken rest for a few minutes then drizzle some reserved marinade over it.
  8. Fluff the coconut rice with a fork. Serve rice alongside chicken, drizzling any remaining sauce over both.
  9. Garnish with fresh cilantro and lime wedges before serving.
