  • 1 teaspoon vanilla extract or almond extract
  • 1 large egg can use a flax egg for vegan option
For the Cheesecake Filling
  • 24 ounces cream cheese full-fat
  • 3/4 cup sugar can use a sugar substitute
  • 1 cup sour cream can substitute Greek yogurt
  • 1 teaspoon vanilla extract preferably pure
  • 3 large eggs room temperature
For the Topping
  • 1 cup whipped cream can use coconut whipped cream
  • jimmies sprinkles optional

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Blend flour, butter, sugar, and vanilla in a bowl until crumbly. Press into greased springform pan and bake for 10-12 minutes until golden. Cool completely.
  2. Beat cream cheese until creamy. Add sugar, sour cream, and vanilla, blending until smooth. Add eggs one at a time, mixing just until combined. Avoid overmixing.
  3. Pour filling over cooled crust. Smooth the top, then bake at 325°F (163°C) for 50-60 minutes until edges are set and center is slightly jiggly.
  4. Turn off oven and let cheesecake cool gradually with door slightly open for about an hour. Then refrigerate for at least 4 hours or overnight.
  5. Whip cream until soft peaks form. Spread over cheesecake and top with colorful jimmies before serving.
