Preparation
- Wash and slice fresh strawberries, sprinkle with sugar and lemon juice, let macerate for 15 minutes.
- Beat softened cream cheese until creamy, blend in powdered sugar and vanilla extract.
- Whip heavy cream on high speed until stiff peaks form, approximately 2-3 minutes.
- Fold whipped cream into cream cheese mixture gently until smooth.
- Crush graham crackers and mix with melted butter until it resembles wet sand.
Assembly
- Press half of graham cracker mixture into the bottom of a 9x13 inch dish.
- Spread half of the cream cheese filling over crust, add a layer of macerated strawberries, and repeat.
- Garnish with fresh mint leaves and additional sliced strawberries.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Slice and serve cold.
