  • 1 teaspoon Vanilla Extract
  • 1 cup Heavy Whipping Cream Whipped until stiff peaks form
  • 2 cups Fresh Strawberries Sliced and macerated
Crust
  • 1.5 cups Graham Crackers Crushed
  • 0.5 cup Unsalted Butter Melted
Garnish
  • Fresh Mint Leaves For topping
  • 1 cup Additional Sliced Strawberries For topping

Method
 

Preparation
  1. Wash and slice fresh strawberries, sprinkle with sugar and lemon juice, let macerate for 15 minutes.
  2. Beat softened cream cheese until creamy, blend in powdered sugar and vanilla extract.
  3. Whip heavy cream on high speed until stiff peaks form, approximately 2-3 minutes.
  4. Fold whipped cream into cream cheese mixture gently until smooth.
  5. Crush graham crackers and mix with melted butter until it resembles wet sand.
Assembly
  1. Press half of graham cracker mixture into the bottom of a 9x13 inch dish.
  2. Spread half of the cream cheese filling over crust, add a layer of macerated strawberries, and repeat.
  3. Garnish with fresh mint leaves and additional sliced strawberries.
  4. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  5. Slice and serve cold.
