Step-by-Step Instructions
  1. Marinate the Chicken: In a resealable bag, combine the chicken with pesto, garlic, salt, pepper, and half of the Italian seasoning along with red pepper flakes. Let it marinate for at least 15 minutes.
  2. Cook the Chicken: Heat olive oil in a large skillet, add marinated chicken, and cook for 6-8 minutes until browned and cooked through. Remove and set aside.
  3. Sauté the Vegetables: In the same skillet, add additional olive oil if needed, then sauté zucchini and cherry tomatoes with the remaining Italian seasoning for 4-5 minutes.
  4. Combine All Ingredients: Return chicken to the skillet, stir in cannellini beans and balsamic vinegar, and cook for another 2-3 minutes to blend flavors.
  5. Melt the Cheese: Sprinkle mozzarella cheese over the mixture, cover, and let it cook on low heat for 2-3 minutes or until melted.
  6. Serve and Enjoy: Garnish with fresh basil and serve warm with pasta, quinoa, or salad.
