Method

Preparation Steps
  1. Begin by peeling large yellow or sweet onions and slicing them into ½-inch thick rings. Carefully separate the rings to create a sturdy base for stuffing.
  2. In a medium bowl, combine softened cream cheese, shredded sharp cheddar, finely diced jalapeños, and any optional add-ins you prefer. Mix thoroughly and let chill in the refrigerator for 10 minutes.
  3. Using a spoon or piping bag, fill each onion ring with the creamy jalapeño filling. Ensure the filling is smooth at the edges.
  4. Arrange the stuffed rings on a parchment-lined baking tray and freeze for 20 to 30 minutes.
  5. Prepare three shallow dishes: one with flour, another with beaten eggs, and the last with breadcrumbs. Dredge each frozen onion ring in flour, dip into egg wash, and coat with breadcrumbs.
  6. Heat oil to 350°F (175°C) and fry each batch of onion rings for about 2 to 3 minutes per side, or until golden brown and crispy.
  7. Transfer fried onion rings to a plate lined with paper towels. Serve hot with your favorite dipping sauces.
