- Begin by peeling large yellow or sweet onions and slicing them into ½-inch thick rings. Carefully separate the rings to create a sturdy base for stuffing.
- In a medium bowl, combine softened cream cheese, shredded sharp cheddar, finely diced jalapeños, and any optional add-ins you prefer. Mix thoroughly and let chill in the refrigerator for 10 minutes.
- Using a spoon or piping bag, fill each onion ring with the creamy jalapeño filling. Ensure the filling is smooth at the edges.
- Arrange the stuffed rings on a parchment-lined baking tray and freeze for 20 to 30 minutes.
- Prepare three shallow dishes: one with flour, another with beaten eggs, and the last with breadcrumbs. Dredge each frozen onion ring in flour, dip into egg wash, and coat with breadcrumbs.
