In a mixing bowl, dissolve the flavored gelatin in 1 cup of boiling water, stirring until completely dissolved. Add 1 cup of cold water and mix well. Pour the mixture into a 9x13-inch baking dish. Refrigerate for about 2 hours, or until fully set.
In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Once the gelatin is set, carefully flip it onto a clean cutting board or countertop. Cut the gelatin into rectangles, about 2 inches by 3 inches.
Spread a thin layer of the cream cheese mixture over each gelatin rectangle, then sprinkle a few pieces of chopped fruit on top.
Roll each rectangle tightly from one end to the other, creating a roll-up.
Place the roll-ups seam-side down on a serving platter. If desired, serve with whipped cream on the side for dipping.
