  • 1 tablespoon lemon zest freshly grated

  • 1 teaspoon lemon extract
For the Frosting
  • 8 ounces cream cheese softened
  • 1/4 cup butter softened
  • 2 cups confectioners' sugar
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon lemon zest from half a lemon

Prepare the Crust
  1. Cream together unsalted butter and granulated sugar until light and fluffy, about 5–7 minutes. Beat in eggs one at a time, then add lemon extract. Gradually blend in flour, salt, and lemon zest, then spread into a greased baking pan.
Bake the Crust
  1. Preheat oven to 350°F (175°C). Bake crust for 18–22 minutes until golden brown and set. Cool on wire rack for 30 minutes.
Make the Frosting
  1. Beat cream cheese and butter until fluffy. Gradually add confectioners' sugar, lemon juice, and lemon zest until smooth.
Frost and Cut
  1. Spread frosting evenly over cooled crust. Cut into desired portions and refrigerate.
