  2. Combine granulated sugar with lemon zest in a bowl, rubbing to release fragrant oils.
  3. Melt chocolate and butter in a double boiler, stirring until smooth. Remove from heat and cool.
  4. Beat eggs with lemon-infused sugar mixture until pale and fluffy.
  5. Fold melted chocolate mixture into eggs, then add vanilla and lemon juice.
  6. Sift flour and salt into batter and fold gently until just combined.
