  • 1 cup All-Purpose Flour
  • 2 large Eggs beaten
For the Coating
  • 1 cup Romano Cheese grated
  • 1 tablespoon Lemon Zest
For Cooking
  • 2 tablespoons Olive Oil
  • 2 tablespoons Butter
  • 1/4 cup Lemon Juice
For Garnish
  • 1/4 cup Fresh Parsley chopped
  • 2 slices Lemon Slices for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Season chicken breasts with salt and pepper.
  3. Prepare dredging stations: flour, beaten eggs, and cheese mixture.
  4. Dredge chicken in flour, dip in eggs, and coat with cheese mixture.
  5. Heat olive oil and butter in an ovenproof skillet over medium-high heat.
  6. Cook each side of the chicken for about 2-3 minutes until golden brown.
  7. Pour chicken broth and lemon juice over the browned chicken.
  8. Transfer the skillet to the oven and bake for 20-25 minutes until internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes and garnish with parsley and lemon slices before serving.
