Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C). Line a muffin pan with paper liners or grease it.
  2. In a medium bowl, combine 1 cup of all-purpose flour, 1/2 cup of light brown sugar, and a pinch of salt. Melt 1/4 cup of unsalted butter, then mix it into the dry ingredients until crumbly.
  3. In a large bowl, whisk together 1.5 cups of flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt. In another bowl, beat 1/2 cup of softened butter with 1/2 cup of granulated sugar until fluffy. Mix in 2 eggs, lemon zest, vanilla extract, Greek yogurt, and lemon juice.
  4. In a small mixing bowl, beat 8 oz of cream cheese with 1/4 cup of powdered sugar and 1/2 teaspoon of vanilla extract until smooth.
