  • 2 tablespoons Coconut Oil Olive oil can be used as a substitution.
For Flavor
  • 1 tablespoon Lemon Juice Juice from half a lemon.
  • 1 tablespoon Lemon Zest Use the zest along with the juice.
  • 1 teaspoon Turmeric Powder Ensure it's fresh for the best taste.
  • to taste Salt Adjust according to preference.

Method
 

Cooking Steps
  1. Rinse 1 cup of uncooked quinoa under cold water. Combine with 2 cups of water or vegetable broth in a medium saucepan. Bring to a boil, reduce to low, cover, and simmer for about 15 minutes.
  2. Remove from heat and let it sit, covered, for about 5 minutes to firm up and separate. Fluff quinoa with a fork.
  3. In a large mixing bowl, add warm quinoa and 2 tablespoons of coconut oil, stirring until melted. Mix in lemon juice, zest, turmeric powder, and salt.
  4. Taste and adjust salt or lemon juice as needed for personal preference.
  5. Optional: Mix in desired add-ins like green onions or diced avocado for extra texture.
  6. Serve warm as a side dish or enjoy cold as part of a meal prep.
