- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine freshly chopped parsley, lemon juice, lemon zest, olive oil, minced garlic, salt, and pepper. Mix thoroughly.
- Place the cod fillets in a greased 11x7 inch baking dish.
- Generously spoon the parsley mixture over the cod fillets.
- Sprinkle the chopped green onions atop the cod fillets.
- Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 10-15 minutes, checking for doneness.
- Remove the cod from the oven and let it rest for a couple of minutes before serving.
