  • 8 ounces Mushrooms Any variety like cremini or button works

Method
 

Preparation
  1. Pat dry the chicken breast, cut into bite-sized cubes, and season with salt and pepper before coating with cornstarch.
  2. Heat oil in a skillet and brown the chicken for 2-3 minutes per side, then set aside.
  3. Sauté red onion for 3-4 minutes until soft, then add mushrooms and garlic, cooking for an additional 5 minutes.
  4. Whisk together cornstarch, wine and half and half, pour into the skillet, and simmer for 5 minutes.
  5. Add chicken and cooked pasta to the skillet, mix gently, and cook over low heat for 2-3 minutes.
  6. Stir in Parmesan cheese until melted and serve immediately.
