Step-by-Step Instructions

  2. In a frying pan over medium-high heat, add olive oil and spread the cauliflower rice evenly, sautéing for 5–10 minutes.
  3. In the same pan, add ground beef, diced bell pepper, and onion. Cook for 5–7 minutes until browned and tender.
  4. Stir in taco seasoning and tomato paste, adding water to create a filling. Simmer for 7–10 minutes.
  5. Layer the beef mixture over the cooked cauliflower rice, then sprinkle cheddar cheese on top.
  6. Bake for 10–15 minutes until cheese is melted and bubbly.
  7. Remove from oven and spread sour cream on top, then sprinkle with remaining cheddar cheese.
  8. Slice and top with salsa, lettuce, tomatoes, olives, avocado, jalapenos, and cilantro.
