Step-by-Step Instructions for Mango Avocado Pasta Salad
  1. Cook the pasta in a large pot of salted boiling water for 10-12 minutes until al-dente, drain and rinse under cold water.
  2. In a food processor, combine cilantro, lime juice, and jalapeño, pulse until smooth. Adjust seasoning as needed.
  3. Pour half the dressing over the cooled pasta and gently toss, then add diced avocado and mango with the remaining dressing.
  4. Fold in chopped cilantro, sprinkle with toasted pine nuts, and if desired, add diced celery or cucumbers. Serve immediately or chill in the fridge.
