  • 2 cups Roma or Beefsteak Tomatoes Can substitute with any ripe tomatoes.
  • 1 medium White Onion Red onion can be substituted.
  • 2 tablespoons Avocado Oil or Olive Oil
  • 2 pieces Ripe Mangos Peaches can be used as a substitute.
  • 1/4 cup Cilantro Omit or substitute with parsley if not preferred.
  • 2 tablespoons Lime Juice Fresh lime juice is recommended.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used instead.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop tomatoes, habanero peppers, and onion. Spread on a baking sheet and drizzle with oil.
  3. Roast the vegetables for about 25 minutes, then broil for 2 minutes for extra flavor.
  4. Allow to cool, then blend roasted vegetables with mangos, cilantro, lime juice, salt, and garlic powder.
  5. Transfer to an airtight container and refrigerate for a few hours, preferably overnight.
