For the Poached Plums
  • 4 firm Plums or other stone fruits
  • 1 piece Vanilla Bean or 1 ½ tsp vanilla extract
  • 1/2 cup Water
For Topping & Baking
  • 2 tbsp Turbinado Sugar optional
  • Cooking Spray or melted vegan butter

  1. Prepare the Poached Plums by combining maple syrup, sliced plums, vanilla bean, cardamom pods, and water in a saucepan. Simmer until tender.
  2. Make the Vegan Buttermilk by mixing soy milk and apple cider vinegar. Let sit to curdle.
  3. Combine dry ingredients by whisking together the flours and baking powder in a bowl.
  4. Cut in the Vegan Butter until the mixture resembles a soft texture with pea-sized pieces.
