  • 2 cups Chicken Broth Opt for low-sodium
For the Creamy Sauce
  • 1 cup Heavy Cream Can be substituted with half-and-half
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Italian Seasoning Customize with dried herbs
For the Veggies and Cheese
  • 2 cups Fresh Spinach Can be replaced with kale or Swiss chard
  • 1/2 cup Parmesan Cheese Sprinkle more on top

Method
 

Cooking Steps
  1. Season the chicken breasts generously with salt and pepper, then set aside.
  2. Heat olive oil in a skillet over medium heat and sear the chicken for 6-7 minutes on each side until golden brown. Remove and let rest.
  3. Pour chicken broth into the skillet and simmer for 3-4 minutes, stirring occasionally.
  4. Add orzo, garlic powder, and Italian seasoning. Cook uncovered for 10-12 minutes, stirring occasionally.
  5. Stir in heavy cream and spinach until spinach wilts and sauce thickens.
  6. Slice the rested chicken and place it on top of the creamy orzo.
  7. Sprinkle extra Parmesan cheese before serving. Enjoy!
