Preparation
- Begin by dividing all your salad ingredients into four serving bowls. Add 4 cups of fresh salad greens as the base for each bowl, followed by halved and sliced cucumber, drained roasted red pepper strips, chopped artichoke hearts, and pieces of rotisserie chicken.
- In a medium mixing bowl, whisk together ½ cup of olive oil, 3 tablespoons of red wine vinegar, the juice from one lemon, and 1 tablespoon of Dijon mustard until well combined.
- Sprinkle in 1 teaspoon each of dried basil, oregano, and thyme, along with ¾ teaspoon of garlic powder, ½ teaspoon of salt, and a few grinds of black pepper.
- Just before serving, drizzle approximately 2 tablespoons of the prepared dressing over each salad bowl and gently toss.
- If desired, sprinkle ¼ cup of toasted pine nuts over each salad for a nutty crunch.
- Serve your beautifully arranged Mediterranean Chicken Salads immediately.
