  • 1 can Chickpeas rinsed and drained
  • 1 Garlic minced or sliced (optional)
  • 1/2 cup Cucumber diced
  • 1 medium Tomato diced
  • 1/4 cup Olives sliced
  • 1/4 cup Red Onion finely chopped
  • 1/4 cup Parsley chopped
  • 1 tsp Dried Oregano
  • 1 tsp Basil chopped
  • 1 tbsp Lemon Juice freshly squeezed
  • 2 tbsp Extra Virgin Olive Oil
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Gather all ingredients. Rinse and drain chickpeas, dice cucumber, tomato, and olives. Finely chop red onion and parsley. Mince garlic if using. Gather herbs and lemon juice.
  2. In a mixing bowl, add chickpeas, cucumber, tomato, and olives. Sprinkle with red onion, parsley, and garlic. Add oregano and basil.
  3. Drizzle with lemon juice and olive oil. Toss well to coat ingredients. Adjust seasoning with salt and pepper.
  4. Serve immediately or chill for at least 30 minutes to enhance flavors.
  5. Store leftovers in an airtight container for up to four days in the refrigerator.
