- Begin by warming a large nonstick skillet over medium heat. Add 1/2 tablespoon of unsalted butter or olive oil, allowing it to melt.
- Lay one of your flour tortillas flat. Spread approximately 2 tablespoons of pizza sauce on one half.
- Layer 1/2 cup of shredded mozzarella on top of the sauce, then add provolone (if using) and 6 slices of pepperoni. Sprinkle Italian seasoning and optional crushed red pepper flakes.
- Fold the tortilla in half, enclosing the fillings, and press down gently.
- Cook in the skillet for 2-3 minutes on one side until golden brown. Flip and cook for another 2-3 minutes until the cheese is melted.
