Step‑by‑Step Instructions for Pizza Quesadilla
  1. Begin by warming a large nonstick skillet over medium heat. Add 1/2 tablespoon of unsalted butter or olive oil, allowing it to melt.
  2. Lay one of your flour tortillas flat. Spread approximately 2 tablespoons of pizza sauce on one half.
  3. Layer 1/2 cup of shredded mozzarella on top of the sauce, then add provolone (if using) and 6 slices of pepperoni. Sprinkle Italian seasoning and optional crushed red pepper flakes.
  4. Fold the tortilla in half, enclosing the fillings, and press down gently.
  5. Cook in the skillet for 2-3 minutes on one side until golden brown. Flip and cook for another 2-3 minutes until the cheese is melted.
  6. Remove from the skillet and repeat with remaining ingredients, adding more butter or oil if needed.
  7. Sprinkle cooked quesadillas with grated Parmesan and parsley or dried oregano. Let rest for 1 minute before cutting.
  8. Slice into wedges and serve hot with extra pizza sauce on the side for dipping.

Notes
