Ingredients
  

  • 2 cups green cabbage finely shredded
  • 1 cup red cabbage finely shredded
  • 1 cup carrots grated
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the green cabbage, red cabbage, carrots, red onion, and cilantro. Toss to mix well.
  2. In a separate bowl, whisk together the mayonnaise, lime juice, honey, chili powder, cumin, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, give the coleslaw a good stir and adjust seasoning if necessary.
