Salad
  • 3 cups Cooked Long Grain Rice Leftover rice works well.
  • 16 oz Frozen Southwestern Corn Fresh or canned corn can also be used.
  • 1 cup Cotija Cheese Substitution: Feta cheese for a similar flavor.
  • 0.25 cups Cilantro (minced) Omit if disliked; green onions or parsley can be substituted.
  • 0.5 cups Green Onions (chopped) Can be replaced with chives.
  • 1 unit Jalapeno Pepper (finely chopped, seeded) Adjust according to spice tolerance.
  • to taste dash Smoked Paprika Regular paprika can also be used.

Method
 

Make the Dressing
  1. In a large glass bowl, whisk together mayonnaise, 2% milk, lime juice and zest, minced garlic, ground cumin, and a pinch of salt and pepper until smooth and creamy.
Combine the Rice and Corn
  1. Gently fold in cooked and cooled long grain rice and thawed frozen Southwestern corn using a spatula.
Add Fresh Ingredients
  1. Incorporate cotija cheese, minced cilantro, chopped green onions, and finely chopped jalapeno pepper, and mix carefully.
Season to Perfection
  1. Taste the salad and adjust the seasoning as needed, adding more salt, pepper, or lime juice.
Garnish and Chill
  1. Sprinkle smoked paprika and extra cilantro on top, then allow the salad to chill in the refrigerator for at least 30 minutes.
