Method
 

Step-by-Step Instructions for Mini Meatloaf
  1. Preheat your oven to 350°F (175°C) and spray the muffin tin with nonstick spray.
  2. In a large mixing bowl, combine ground beef, minced onion, eggs, breadcrumbs, Worcestershire sauce, pepper, seasoning salt, garlic powder, and half of the ketchup. Mix gently until just combined.
  3. Scoop the meat mixture into the prepared muffin tin, filling each cup evenly with a heaping scoop.
  4. In a small bowl, mix the remaining ketchup with brown sugar and mustard. Spread the glaze over the tops of each mini meatloaf.
  5. Bake in the preheated oven for 30 minutes. Check for doneness with a meat thermometer (internal temperature should reach 160°F).
  6. Remove from the oven and let cool for 5 minutes before carefully lifting the muffins from the tin.
