Ingredients
  

  • 6 medium Lemons Cut into ½ inch slices for optimal flavor.
  • 1 cup Sucanat Natural sugar; can substitute with granulated sugar.
  • 1 cup Fresh Mint Add more if you love that minty kick!
  • 4 sprigs Fresh Rosemary Reserve a few sprigs for garnish.
  • 1 whole Vanilla Bean You can substitute with 2 teaspoons of vanilla extract.
  • 8 cups Cold Water Add to taste.
  • Ice Ice Essential for serving.

Equipment

  • Medium mesh strainer
  • Clean bowl
  • large pitcher

Method
 

  1. Prepare the strainer by placing a medium mesh strainer over a clean bowl.
  2. Slice the vanilla bean lengthwise and scrape out the seeds. Reserve the pod for infusion.
  3. In the strainer, layer in the lemon slices, Sucanat, fresh mint, rosemary, and the scraped vanilla seeds.
  4. Gently massage the mixture for 2-3 minutes to release the juices from the lemon slices.
  5. Cover the bowl tightly with plastic wrap and place it in the refrigerator for at least 3-4 hours, preferably overnight.
  6. Remove the bowl from the fridge and gently massage the mixture again before straining.
  7. In a large pitcher, combine the concentrated lemon juice with 8 cups of cold water. Stir well and serve over ice.

Notes
