- In a large mixing bowl, crush the Mint Oreos into fine crumbs. Add the softened cream cheese and mix well until creamy.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- After chilling, roll the mixture into small balls, about 1 inch in diameter, and place on a parchment-lined tray.
- Melt your choice of chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Dip each truffle into the melted chocolate, allowing excess to drip off, then place back on the lined tray. Optionally, sprinkle with crushed Oreos before the chocolate sets.
- Refrigerate the tray for about 30 minutes, or until chocolate is set.
