Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, crush the Mint Oreos into fine crumbs. Add the softened cream cheese and mix well until creamy.
  2. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  3. After chilling, roll the mixture into small balls, about 1 inch in diameter, and place on a parchment-lined tray.
  4. Melt your choice of chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  5. Dip each truffle into the melted chocolate, allowing excess to drip off, then place back on the lined tray. Optionally, sprinkle with crushed Oreos before the chocolate sets.
  6. Refrigerate the tray for about 30 minutes, or until chocolate is set.
