Ingredients
  

For the Meat Sauce
  • 1 pound Ground Beef
  • 1 pound Italian Sausage
  • 1 medium Yellow Onion chopped
  • 3 cloves Garlic minced
  • 1/2 teaspoon Red Pepper Flakes optional
  • 32 ounces Marinara Sauce your favorite jar or homemade
  • 1 teaspoon Oregano fresh is best if you have it

For the Cheese Filling
  • 1.5 cups Cottage Cheese or ricotta
  • 1 Egg
  • 0.5 cup Parmesan Cheese
  • 1 tablespoon Dried Parsley or fresh
For Assembly
  • 12 Lasagna Noodles whole wheat or gluten-free if needed
  • 3 cups Mozzarella Cheese for topping
  • 2 cups Swiss Cheese or provolone

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking dish with cooking spray.
  2. In a large saucepan, cook ground beef, Italian sausage, and chopped onion over medium-high heat for 8-10 minutes.
  3. Drain any excess fat and stir in garlic, marinara sauce, oregano, salt, and pepper; simmer for 10 minutes.
  4. In a large pot, boil salted water and cook lasagna noodles until al dente, then drain and lay flat on parchment paper.
  5. In a mixing bowl, combine cottage cheese, egg, Parmesan cheese, dried parsley, and season with salt and pepper.
  6. Layer the lasagna starting with meat sauce, then noodles, cheese filling, and repeat; finish with mozzarella and Swiss cheese.
  7. Cover with foil and bake for 35-40 minutes until bubbly; let rest for 10 minutes before serving.
