Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with non-stick spray.
  2. In a medium bowl, whisk together honey, orange juice, lemon juice, chili powder, and cumin.
  3. Place salmon filets in a resealable bag and pour the marinade over; let marinate for 20 minutes in the refrigerator.
  4. While marinating, thinly slice fennel, blood orange, lemon, and red chile; mix in a bowl.
  5. Add olive oil, salt, and pepper to the sliced vegetables; toss well and transfer to the baking dish.
  6. Place marinated salmon filets on top of the fennel mixture, skin side down. Brush with reserved marinade.
  7. Roast in the oven for 15-25 minutes until salmon flakes easily and is no longer translucent.
  8. Remove from oven and drizzle remaining marinade over salmon; serve immediately.
