- In a large bowl, combine ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- In a separate bowl, mix together mozzarella cheese, Parmesan cheese, and spinach if using.
- On a clean surface, flatten the meat mixture into a large rectangle and spoon the cheese filling along the center. Roll the meat around the filling.
- Place the rolled meatloaf seam-side down in a baking sheet or loaf pan and bake for 45-50 minutes.
