  1. Begin by roughly chopping the celery and scallions, then transfer them into a food processor. Pulse the vegetables until they resemble rice-sized pieces, about 15-20 seconds, ensuring they maintain their crunch. Once minced, transfer them into a large mixing bowl and set aside.
  2. Next, cut the deli ham into manageable chunks and add the ham to the food processor. Pulse until finely minced, aiming for pieces no larger than a pea, about 20-30 seconds.
  3. In the bowl with your minced vegetables, add the softened cream cheese, mayonnaise, yellow mustard, and paprika. Mix everything together until well combined and smooth. Fold in the minced ham, ensuring it’s evenly distributed. Taste and adjust seasoning with salt and pepper.
