- Preheat the oven to 375°F (190°C).
- Melt ½ cup of unsalted butter in a 9x9-inch baking dish for about 5 minutes in the oven.
- In a medium saucepan, combine sliced fresh peaches with ¼ cup of granulated sugar and 1 tablespoon of lemon juice, and heat over high flame for about 5 minutes.
- Mix 1 cup of all-purpose flour, ¾ cup of sugar, 1 teaspoon of baking powder, and a pinch of salt in a stand mixer, then add ¾ cup of milk and mix gently until just moistened.
- Pour the batter over the melted butter without stirring. Spoon the prepared peach mixture evenly over the batter, also without stirring.
- Bake for 30 minutes or until the top is golden brown and a toothpick comes out clean.
- Let the cobbler cool for a few minutes. Serve warm, ideally topped with vanilla ice cream or whipped cream.
