Cooking Instructions
  1. In a large skillet over medium heat, drizzle a tablespoon of oil and add the diced onion and minced garlic. Sauté for 3-5 minutes until the onions become translucent and fragrant.
  2. Add 1 lb of ground beef to the skillet, breaking it apart with a wooden spoon. Cook for 5-7 minutes, stirring occasionally, until browned.
  3. Stir in 1-2 chopped bell peppers and continue cooking for about 3-4 minutes until they soften.
  4. Pour in a can of diced tomatoes along with their juices, mixing well. Heat through for 2 minutes.
  5. Stir in 2 cups of rice, along with seasonings. Pour in 4 cups of broth and bring to a gentle boil.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for 20-30 minutes, checking occasionally.
  7. After 20-30 minutes, remove the lid and fluff the rice gently with a fork. Let it sit for a few minutes before serving.
