  • 4 salmon fillets approximately 6 ounces each
  • 1 cup freshly squeezed orange juice
  • 1 tablespoon grated orange peel
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic finely chopped
  • 1 teaspoon freshly grated ginger
  • Salt and freshly ground black pepper to taste
  • 2 green onions chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  2. In a medium saucepan, mix together the orange juice, grated orange peel, honey, soy sauce, chopped garlic, and grated ginger.
  3. Heat this mixture over medium heat until it reaches a gentle simmer, cooking for about 5-7 minutes until it thickens slightly.
  4. Remove the glaze from heat and set aside.
  5. Season the salmon fillets generously with salt and pepper on both sides, then arrange them skin-side down on the prepared baking sheet.
  6. Using a brush, apply a generous layer of the citrus glaze over each fillet, saving some for later.
  7. Place the salmon in the oven and bake for 12-15 minutes, or until the fish is opaque and flakes easily when tested with a fork.
  8. Remove the salmon from the oven and drizzle the reserved glaze over the top.
  9. Garnish with the chopped green onions before serving.
