- In a stand mixer bowl, combine 1 cup of warm filtered water, 2 teaspoons of active dry yeast, and 2 teaspoons of sugar. Stir and let sit for about 10 minutes.
- Once the yeast is proofed, add 1 cup of whole wheat flour, 1 beaten egg, 3 tablespoons of softened butter, 1/4 cup of molasses, and 1/4 cup of honey. Mix on low speed until combined.
- Gradually mix in 3 cups of bread flour, 1 tablespoon of natural baking cocoa, and 1 teaspoon of salt. Increase mixer speed until the dough pulls away from the sides.
- Attach the dough hook and knead the dough on medium speed for about 10 minutes until smooth and elastic.
- Shape the kneaded dough into a ball and place it in a greased bowl. Cover and let rise in a warm area for 60-90 minutes until doubled in size.
- After the first rise, punch down the dough gently and divide into 6 small loaves or 16 individual rolls. Arrange on a baking sheet and let rise again for 45-60 minutes.
- Preheat your oven to 350°F (175°C). Bake the loaves for 25-30 minutes or the rolls for about 20 minutes until golden brown.
- Remove from oven and allow to cool on a wire rack for at least 15 minutes before slicing.
