Preparation Steps
- Cook the sausage in a large skillet over medium heat for 5-7 minutes until browned, then transfer to a paper towel-lined plate.
- Whisk together eggs, salt, black pepper, cayenne pepper, ground mustard, dried sage, and dried chives in a large mixing bowl. Slowly add half-and-half while whisking until smooth.
- Grease a 13"x9" baking dish and layer with cubed bread, cooked sausage, yellow and white cheddar cheeses.
- Pour the egg mixture evenly over the layered ingredients, pressing down to submerge the bread. Cover with plastic wrap and refrigerate overnight.
- Preheat oven to 350°F (175°C) the next morning. Let casserole sit for 15-20 minutes at room temperature.
- Bake for 45-50 minutes until the top is golden brown and a knife comes out clean. Let rest for 5 minutes before serving.
