Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease a standard loaf pan.
  2. In a large mixing bowl, combine all dry ingredients and whisk until no lumps remain.
  3. In a separate bowl, whisk together the eggs, melted coconut oil, and maple syrup. Fold in shredded carrots and diced apples.
  4. Combine wet and dry ingredients, mixing until no dry spots are visible. Fold in raisins and walnuts.
  5. Transfer the batter to the loaf pan, spreading it evenly across the top.
  6. Bake for 45-48 minutes, checking for doneness with a toothpick.
  7. Allow to cool in the pan for 15 minutes before transferring to a wire rack.
