  • 8 ounces Rotini Pasta Any sturdy pasta shape works.
For the Veggies
  • 1 cup Cucumbers Diced into bite-sized pieces.
  • 1 cup Cherry Tomatoes Halved for easy snacking.
  • 1/2 cup Black Olives Sliced; substitute green olives if desired.
  • 1/4 cup Fresh Parsley Finely chopped; basil or dill can be used.
For the Dressing
  • 1/2 cup Italian Dressing Or use Greek vinaigrette or lemon herb dressing.
  • Salt To taste.
  • Pepper Freshly cracked, to taste.

Method
 

Cooking and Mixing
  1. Cook the rotini pasta in salted boiling water for 8-10 minutes until al dente. Drain and rinse with cold water.
  2. Chop cucumbers, halve cherry tomatoes, slice olives, and chop parsley. Set aside.
  3. In a large mixing bowl, combine cooled pasta with chopped veggies and drizzle with Italian dressing. Toss gently.
  4. Season with salt and pepper to taste, adding more dressing if necessary.
  5. Portion the mixture into small cups ensuring a good mix of pasta and vegetables.
  6. Chill the filled cups in the refrigerator for at least 30 minutes before serving.
