  • 1 tablespoon Turbinado Sugar optional for crunch
  • 1 quart Vanilla Ice Cream to serve

Method
 

Step-by-Step Instructions
  1. Cut day-old brioche into 1-inch cubes and place them in a greased 9x13-inch baking dish.
  2. In a mixing bowl, whisk together eggs, buttermilk, heavy cream, vanilla extract, granulated sugar, salt, and cinnamon.
  3. Pour the custard mixture over the brioche cubes and let sit covered for at least 30 minutes.
  4. In a saucepan, combine diced peaches, brown sugar, and water; cook over medium heat until soft.
  5. Layer half of the peach filling over soaked brioche, then add remaining brioche and pour the rest of the peach filling on top.
  6. Preheat oven to 350°F (175°C); bake for 50-60 minutes until top is golden brown and center is jiggly.
  7. Let the pudding cool for 10 minutes before serving warm with vanilla ice cream.
