- Preheat your oven to 375°F (190°C).
- In a 9x13-inch baking dish, layer the sliced peaches. Pour in the bourbon, fresh orange juice, orange zest, and vanilla extract. Sprinkle the light brown sugar and ground cinnamon over the peaches and gently toss everything together.
- Sprinkle cornstarch over the top and toss the mixture gently to ensure even distribution.
- In a separate bowl, combine oats, chopped pecans, granulated sugar, brown sugar, flour, cinnamon, and optional cardamom. Stir until well mixed.
- Cut the room temperature butter into the dry mixture until it resembles coarse meal.
- Evenly distribute the oat and pecan topping over the peach mixture.
- Bake for 40–45 minutes until the peaches are bubbling and the topping is golden brown.
- Allow to cool for 15 minutes before serving. Enjoy warm with vanilla ice cream or whipped cream.
