Peach Filling
  • 4 cups Fresh peaches (peeled and diced) or thawed frozen peaches, well-drained
  • 1/4 cup Granulated sugar adjust based on sweetness of peaches
  • 2 tbsp Cornstarch arrowroot powder is a great alternative
  • 1 tbsp Lemon juice lime juice can be a fun twist
  • 1/2 tsp Ground cinnamon optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan by lining it with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
  3. Add the cold, cubed butter to the dry mixture and cut it in until it resembles coarse crumbs. Stir in the egg and vanilla extract until clumps form.
  4. In another bowl, combine diced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon. Stir until peaches are evenly coated.
  5. Press two-thirds of the crumb mixture into the bottom of the prepared pan, then spread the peach filling over it. Sprinkle the remaining crumb mixture on top.
  6. Bake for 30-35 minutes until the top is golden brown and the filling is bubbly.
  7. Allow to cool completely in the pan before slicing into bars.
