Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan by lining it with parchment paper.
- In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
- Add the cold, cubed butter to the dry mixture and cut it in until it resembles coarse crumbs. Stir in the egg and vanilla extract until clumps form.
- In another bowl, combine diced peaches, granulated sugar, cornstarch, lemon juice, and cinnamon. Stir until peaches are evenly coated.
- Press two-thirds of the crumb mixture into the bottom of the prepared pan, then spread the peach filling over it. Sprinkle the remaining crumb mixture on top.
- Bake for 30-35 minutes until the top is golden brown and the filling is bubbly.
- Allow to cool completely in the pan before slicing into bars.
