Ingredients
  

For the Crust
  • 1.5 cups Graham Crackers Crushed
  • 6 Tbsp Butter Melted
  • 0.125 cups Brown Sugar Can use granulated sugar
For the Cheesecake Filling
  • 8 oz Cream Cheese Softened, full-fat recommended
  • 1 container Cool Whip Can substitute with homemade whipped cream
  • 0.5 cups Powdered Sugar Adjust to taste
For the Peach Topping
  • 1 cups Water Used for thickening
  • 0.333 cups Sugar Use less if peaches are sweet
  • 2 Tbsp Cornstarch Thickening agent
  • 2 Tbsp Orange Jello Experiment with flavors
  • 4 cups Fresh Peaches Diced just before use

Method
 

Preparation
  1. Crush graham crackers to make about 1 ½ cups of crumbs. Mix with melted butter and brown sugar until combined, then press into the bottom of an 8-9 inch square pan.
  2. In a large bowl, beat softened cream cheese with powdered sugar until smooth. Fold in Cool Whip until well blended.
  3. Pour cheesecake filling over the crust and chill for about 30 minutes.
  4. Combine water and cornstarch in a saucepan and bring to a boil while stirring until thickened. Stir in orange Jello and let cool.
  5. Dice fresh peaches just before use; mix them into the cooled peach mixture.
  6. Spread the peach mixture over the chilled cheesecake layer evenly.
  7. Cover with plastic wrap and chill for at least 1-2 hours before serving.
