  1. Preheat your oven to 400°F (200°C). Pat chicken thighs dry and season generously with kosher salt on both sides.
  2. In a mixing bowl, whisk together peach preserves, honey, cider vinegar, soy sauce, ground ginger, and minced garlic. Set aside.
  3. Heat an oven-proof skillet over medium-high heat with a dash of oil. Place chicken thighs skin-side down and sear for 5 minutes until golden brown, then flip and sear the other side for 3 minutes.
  4. Brush the seared chicken thighs with the glaze on both sides. Place the skillet in the oven and bake for 20 to 25 minutes or until the internal temperature reaches 165°F (74°C).
  5. Switch the oven to broil and broil the chicken for 2 to 3 minutes, watching closely to prevent burning.
