Baking Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, mash the ripe bananas until they are smooth and creamy.
- Add the mashed bananas to the bowl with the oats, peanut butter, honey, cinnamon, and vanilla extract. Mix until combined to form a dough.
- Line two baking sheets with parchment paper.
- Drop rounded tablespoons of dough onto the prepared sheets, leaving space between each.
- Gently press down on each cookie mound with a fork to create a criss-cross pattern.
- Bake the cookies for 20 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack.
