Method
 

Baking Instructions
  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, mash the ripe bananas until they are smooth and creamy.
  3. Add the mashed bananas to the bowl with the oats, peanut butter, honey, cinnamon, and vanilla extract. Mix until combined to form a dough.
  4. Line two baking sheets with parchment paper.
  5. Drop rounded tablespoons of dough onto the prepared sheets, leaving space between each.
  6. Gently press down on each cookie mound with a fork to create a criss-cross pattern.
  7. Bake the cookies for 20 minutes, or until the edges are golden brown.
  8. Let the cookies cool on the baking sheets for about 5 minutes before transferring to a wire rack.
